Border Beef & Cheese Chimichangas

Ingredients

- 1 pound lean ground beef
- 1/2 cup onion, chopped
- 1 tbsp prepared minced garlic
- 1 cup salsa
- 1 (8 oz) package Cache Valley Mexican Blend Shredded Cheese
- 6 (10 inch) flour tortillas, warmed
- 2 tbsp vegetable oil

Toppings: salsa, guacamole, sour cream

Directions

Brown beef, onions, and garlic in skillet; drain. Stir in salsa and Cache Valley Mexican Blend Shredded Cheese; mix well.

Spoon one-sixth beef and cheese mixture over center of each tortilla; fold closed forming a rectangle-shaped chimi. Heat oil in large skillet.

Add chimis, seam side down; grill on each side for 2 to 3 minutes or until golden; drain on paper towels. Serve with salsa, guacamole, and sour cream.
